Zen Rice

I’ve been saving this one for awhile. And I’m going to break it out now because I’m too busy eating albacore tuna belly in Seattle and watching immersion circulators in action at the Modernist Cuisine kitchen to write a recipe post.

So, what’s the definition of zen rice?

Rice cooked until it became one with the pan.

To me, zen rice is also rice that requires the cook to be in a state of zen, so that when it burns to the pan you don’t freak out. Instead you put the lid on, let it steam and unstick a little, and then eat the crunchy, hopefully not charred bottom. That’s a delicacy. It’s the best part. Ask Korea. They know.
