Lufa Farms First Basket: Fresh Cherry Tomato Salsa with Green Pepper, Cilantro, and Lime

I couldn’t bear to cook these beautiful cherry tomatoes. So I gave myself two options: Gazpacho or salsa. Salsa won. Really gazpacho and salsa are almost the same thing (more or minus lime juice, different kinds of vinegars, or tomato juice). But most importantly, for gazpacho I probably would have blended half the mixture or diced the vegetables in a food processor, while salsa wouldn’t require cleaning a blender…Is that efficient planning or just poor knife skills?

Ingredients:

1/2 box cherry tomatoes, chopped into 1/2 ” pieces with a very sharp knife (so the juices don’t squirt everywhere)

1 green pepper, diced

1 zucchini

1/4 bunch of cilantro, chopped

Juice of 1 lime

2 tbsp apple cider vinegar

1/4 tsp – 1/2 tsp salt (optional. I skip it if the chips have salt on them already)

Directions:

Combine in bowl. Eat (with tortilla chips, rice crackers, or with a spoon…). Feel just a little sad for all the people in the city who don’t get to taste summer in Spring.
