How to Sprout Microgreens and Legumes: Interview with the Concordia Greenhouse Sprouting Master

Last week I spoke with Concordia Greenhouse sprouter, Stefanie Dimitrovas, about how to sprout chickpeas, alfalfa, mung beans and quinoa, as well as how to grow microgreens. She’s in charge of growing and packing these little nutritional wonders for Le Frigo Vert and other shops in Montreal. Even if your thumb is as un-green as mine, rest assured that the flavour is worth it and the process isn’t complicated. Though, to be fair, I did kill my composting worms…which is a bad sign for simple things that need to be kept in balance. BUT! A good sign that everyone can do better than me, and I’m actually an okay sprouter.
