BBQ-Rubbed Broiled Chicken Wings

These are so simple. Rub the chicken wings in Dijon mustard and sprinkle on some BBQ rub, then broil on both sides until dark and almost blistered. Perfect.

BBQ-Rubbed Broiled Chicken Wings
Serves 4 as an appetizer

Ingredients:
At least 4 large chicken wings, but if your wings are small, at least 8 (I only did 2 – the ones leftover from making Spanish chicken with olives with a whole chicken)
2 tbsp dijon mustard

Ancho Chili Pepper Rub:
1 tbsp ancho chili pepper or chipotle chili pepper
1 tsp paprika
1/2 tsp cayenne pepper
1/2 tsp cumin
1/2 tsp brown sugar
1/2 tsp salt
1/2 tsp freshly ground black pepper

Combine rub ingredients. Coat wings in Dijon, then sprinkle on rub. Preheat broiler to low. Place wings on a baking sheet and place in oven below broiler. Broil 5 minutes, or until browned and almost blacked on top. Turn over wings and cook 5 minutes more, or until golden and almost charred. If your wings are smaller keep a really close eye on them since they will cook faster.
