Mango-Rice Salad, Remade with Sunflower Seeds, Carrots, Celery, and Cilantro

Here’s another rice salad with mango. I figure if I’m not sick of them yet, you’re not either. I tend to forget that I’m a little more obsessed with mango than the average person.

It’s the same recipe as before but a few new ingredients tossed in because I had them and I wanted some more crunch. Mostly, the photos are so vibrant I wanted to post them. All I did was add diced celery, carrots, sunflower seeds, green pepper, cucumber, and more cilantro and mango than called for. Maybe this is more mango and cilantro with rice than rice with mango and cilantro. Either way, it was addictive. I also skipped the dressing because the juice from the mango was enough. A little sprinkle of olive oil is a nice touch with the sweet-and-sour flavour of the fruit.
